Ossetra caviar (scientific name: Acipenser gueldenstaedtii, Russian sturgeon) originates from the ancient and mysterious waters of the Caspian Sea and the Black Sea basins.
This exquisite delicacy is exceptionally rare—sturgeons require 10 to 15 years of meticulous cultivation before reaching the optimal stage of roe maturation. Adult Russian sturgeons are magnificent in size, growing up to 2 meters in length and weighing between 20 to 80 kilograms. Every single pearl of caviar is a brilliant crystallization woven by time and nature.
