Beluga caviar (scientific name: Huso huso, also known as the European sturgeon or great sturgeon) originates from the ancient waters of the Black Sea and Caspian Sea basins.

Beluga is the largest species of sturgeon used for caviar, and raising them requires extreme patience—taking at least 20 to 25 years for them to mature and produce roe. Adult Belugas are exceptionally massive, growing up to 4 to 6 meters in length and weighing over 1,000 kilograms (one ton). As a result, the roe they produce is the largest among all types of caviar, with every single grain as stunning as a pearl.

The buttery flavor and richness of Beluga are noticeably more intense than those of Ossetra.
